The reason for this is that cheese is effectively a milk concentrate, whereby liquids are removed, and milk protein and fat is concentrated and formed into a curd. Consider then the fact that around 45% of all milk produced globally is used for cheese production and the massive impact of cheese on the environment becomes obvious.
Cirkulär AB will be a new player in the value chain of the dairy industry, providing a complementary raw material for dairy processing – microbially produced milk proteins for a more resource-efficient industry. Cirkulär AB and similar companies will be the new producers of milk components for the production dairy products, which will ease the pressure of current milk production on the environment.
