From Idea to Production with Dapibuset

On May 5, Foodtech Innovation Network hosted another session in our Monthly Conversations series, this time focusing on the journey from idea to production. Members gathered in Malmö for a breakfast seminar featuring Lidia Garcia and Micael Simonsson from Foodtech Innovation Network member company Dapibuset, winner of Foodtech Company of the Year 2025. 

Turning Side Streams into Value 

Dapibuset is building a decentralized bio manufacturing platform that transforms agricultural and food industry side streams into high value ingredients. By processing raw materials closer to their source, the ambition is to unlock both sustainability and new business opportunities. 

Their journey started simply, with a whiteboard in a basement and recurring meetings to shape a shared vision. From there, they gradually combined research, partnerships, and support from the innovation ecosystem to move from idea to production. 

Learning by Doing and Building the Right Foundation 

Experimentation has been central from day one. Early tests in small scale environments, from labs to improvised setups, gradually evolved into custom built equipment and pilot systems for food production. 

A key breakthrough came when exploring biomass as a food ingredient. By involving a chef early, the team could quickly test applications such as pasta, falafel, and snacks, demonstrating both taste and commercial potential. 

The founders also emphasized the importance of building the right team from the start, with trust and complementary skills at its core. Today, Dapibuset works with an international team and continues to rely on collaboration, while navigating the innovation support system with persistence and a clear sense of direction.
